Tactics for Pairing Food with Italian Wines

Guided by Chef Av Atikian

JAMcafé is hosting a guided tasting of Italian Wines along with tactics for pairing foods.

Many tasting events offer general suggestions for pairing wines with food types, but very few specifics. We give you more.

Please join us as Chef Av Atikian guides us through his method.

We present 5 Italian wines from our new list, with hors d’oeuvres specially created to demonstrate his tasting principles.

Av explains each pairing and its ingredients, flavours and aromas.

 $35 per person incl tax/gratuity

JAMcafé presents

Terra Valentine Winery
of Spring Mountain, Napa Valley

and

Rusden Wines
of Barossa Valley, Australia

  7 Handcrafted Wines

7 specially matched hors d'hoevres

You don't have to take my word on the quality of these wines.
Here is some commentary from highly regarded winos:

Rusden is all hand-picked, basket pressed, barrel fermented and unfiltered.

“This is the kind of wine only a handful of South Australian vineyards can consistently achieve. There is virtually nothing like it produced anywhere else in the world.”
Robert M Parker Jr., Wine Advocate

“I get a bag of bread ends and a bottle of Rusden Black Guts, then scream at tourists until the police taser me.”
Patton Oswalt, actor (Ratatouille)

Terra Valentine
"94 Points"
2005 Wurtele Vineyard Cabernet Sauvignon
"A gorgeous Cab, rich and complex, that perfectly shows the deep, strong tannins and impeccable structure of Spring Mountain. Perfectly ripe in black currants and tobacco, with exotic cedar and mineral overtones, it's beautiful now, but has the balanced stuffing to age effortlessly for a decade."
Wine Enthusiast

Wine with Character.

"All Richard Karlo's debut reds are quite swarthy for the County thanks to long maceration on the skins and long barrel ageing. "

~ David Lawrason, The County Grapevine ~ Prince Edward County Spring/Summer 2010

09 Chard - VQA

"It was yet another Chardonnay that impressed at this gathering … the Karlo Estates Chardonnay."

~ Michael Pinkus – Ontario Wine Review

08 Pinot Noir
- VQA - Newly Released

08 Quintus - VQA
“light, lively and juicy, with light tannins and brisk acidity. All in all a pleasant, fresh, food friendly and versatile, cool climate style red for current enjoyment.”
~ John Szabo, County Grapevine

“What brilliant wine, like raspberries served in a limestone bowl, fresh and delicious. Medium bodied with great flavour complexity and silky tannins. Long length with pomegranate seed and mineral - savoury - flavoured tobacco accents.”
~ Zoltan Szabo, Good Food Revolution

08 Van Alstine Port
- non VQA - made with Estate grown Frontinac Noir - a new varietal developed to withstand temperatures of -40 degrees so we don't have to "Hill Up" in the County.

Karlo Estates Van Alstine Port chosen by John Szabo & Zoltan Szabo’s Top 10 Cutting Edge Wines in the World at the Toronto Gourmet Food and Wine Show

“…drier on the palate than most, yet full of sweet, ripe, raisined black berry and cherry fruit, spicy plum chutney and prunes in eau-de-vie flavours. The acidity level appears quite low, giving the wine a soft, round, gentle impression...”
~ John Szabo, County Grapevine

A  6-Course Tasting Dinner with Fine Wines from Burgundy's Alexandrine Roy

7:00 PM , Wednesday August 11, 2010

$130 per person

Alexandrine Roy

This small domaine, even by Burgundy’s standards, of 4 hectares, is directed since 2003 by the ambitious and young Alexandrine Roy, the fourth generation to assume the reins at the family domaine in the name of her father, Marc Roy.

Blessed with some exceptional parcels in the village of Gevrey-Chambertin, including that in the renowned Clos Prieur site, the Domaine’s holdings are limited in size sufficient for Alexandrine to be doing all of the vineyard and cellar work herself.

Bringing an attentive approach to the vineyard work and harvesting at the precise moment to preserve acidity and freshness, Alexandrine is able to bring in excellent quality fruit with which to begin the vinifications.
